A complex and intensely aromatic pink sparkling wine which is perfect with food or on its own.\u003c\/p\u003e\n\u003cp\u003eIntense white strawberry and red-cherry aromas on the nose with a hint of caramel and nuts. On the palate, a tight line of acidity drives the palate, which is laden with strawberries and blood orange characters and good mid-palate richness. There’s plenty of texture and some grippy tannins which help dry the palate and keeps it moreish. Lovely long finish and ever evolving in the mouth. \u003c\/p\u003e\n\u003cp\u003eOnly very small quantities were made of this unique wine and a large proportion was bottled into magnums – perfect for a gathering or a celebratory occasion. We draw our inspiration for our sparkling wines from the “grower-style” wines of France. Sustainable winegrowing, minimal intervention winemaking, and a focus on the finished product being a fine wine of complexity and interest first and foremost – the bubbles being just another component to enhance their flavours.\u003c\/p\u003e\n\u003cp\u003eWe harvest fruit with half a degree of extra ripeness for a more full-bodied palate. We utilise endemic, “wild” yeast strains for complexity.\u003c\/p\u003e\n\u003cp\u003eWe ferment in old oak barrels and stir the wines during maturation for added texture. The base wines are then tiraged after 10 months of maturation and aged on lees for at least 4-5 years to bring yet more complexity and that lovely biscuity, toasty character you associate with great sparklings. They’re wines that are best poured into large glasses, swirled and sniffed and savoured not too cold, and they’re wines which should age well too. \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eOur 2021 Sparkling Rosé\u003c\/strong\u003e is made from 100% Pinot Noir grapes sourced from 1080m above sea-level. The highest in the Orange region.\u003c\/p\u003e\n\u003cp\u003ePicked with abundant natural acidity, a hallmark of the 2021 vintage in particular, it was fermented via carbonic maceration for 15 days to enhance the cherry and strawberry aromas on the nose.\u003c\/p\u003e\n\u003cp\u003ePressed and matured in two French oak barrels (one of which was new) for 6 months. The wine went through its second fermentation in bottle and was allowed to rest en tirage for 12 months before disgorgement in November 2023. \u003c\/p\u003e\n\u003cp\u003eThe result is a complex and intensely aromatic pink sparkling wine which is perfect with food or on its own.
