Blending occurred in January and the wine tiraged shortly after. Sustainable winegrowing, minimal intervention winemaking, and a focus on the finished product being a fine wine of complexity and interest first and foremost – the bubbles being just another component to enhance their flavours.\u003c\/p\u003e\n\u003cp\u003eWe harvest fruit with half a degree of extra ripeness for a more full-bodied palate. We utilise endemic, “wild” yeast strains for complexity.\u003c\/p\u003e\n\u003cp\u003eWe ferment in old oak barrels and stir the wines during maturation for added texture. The base wines are then tiraged after 10 months of maturation and aged on lees for at least 4-5 years to bring yet more complexity and that lovely biscuity, toasty character you associate with great sparklings. Natural acid retention was high and when eventually the fruit reached a lovely level of physiological ripeness; sugar levels were still low. A great combination, resulting in delicacy and elegance. Intricacy and intrigue.\u003c\/p\u003e\n\u003cp\u003eOur 2023 Pinot Noir is a multi-faceted wine composed from a whole gamut of components to create complexity through difference: Four different clones were harvested from three different sites ranging from 780m to 1080m in altitude. There were six separate picks of fruit and varying amounts of whole clusters used within each batch.\u003c\/p\u003e\n\u003cp\u003eOnly 10% new French oak was used, but there’s multiple 2\u003csup\u003end\u003c\/sup\u003e and 3\u003csup\u003erd \u003c\/sup\u003euse barriques included as well. All made via traditional, minimal-intervention methods and with no industrial winemaking 'artifact'. \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eCOLOUR – \u003c\/strong\u003eCherry red\/maroon with a bit of turbidity. \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eNOSE –\u003c\/strong\u003e Red fruits step forward initially, with redcurrants and cherries plus rosehip jelly. It finishes predominantly savoury - the nuttiness and oak components nicely nestled in there together. We were spoilt with choice! The season brought us lovely, intense fruit from 3 different vineyards over 6 individual harvest days. Each parcel was kept separately and treated individually in the winery. Some cool fermented stainless steel fermented portions, some barrel fermented, wild yeast portions, some skin contact portions too. All aged for 9-12 months before the daunting task of blending them into their most balanced proportion and bottling in the following Summer. \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eOur green labelled Riesling\u003c\/strong\u003e aims to show fruit driven and floral characters, very much in the lime and citrus blossom spectrum. It is inspired by the cool climate Rieslings produced along the Rhine Valley but with an inbuilt, distinctly Australian style. Dry, precise and pretty in their youth but age worthy and complex underneath.  Purity of acid and freshness is important, as is youthful drinkability. Barrel fermentation and regular lees stirring brings a textural feel in the mouth, and there’s enough phenolic structure to hold the wine together and have it pair nicely with food.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eCOLOUR\u003c\/strong\u003e – Pale with yellow\/green hues \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eNOSE\u003c\/strong\u003e – Exotic tropical fruits up front. To achieve this, we stir the yeast lees in old large format barrels for many months to bring more depth and volume to the mid palate and a lovely balance point to the naturally high acidity of the variety. It also has the added benefit of protecting the wine from oxygen during maturation.  In addition, a small portion is fermented entirely on skins, made more like a red wine would be; to bring a different aroma spectrum and a structural, tannic element to the final blend.\u003c\/p\u003e\n\u003cp\u003eIt’s still aromatic.
